Carricante is the key grape to know for white wines from Etna. It is a white variety, different from the red grape Nerello Mascalese.

The land of Milo and the work done by producers handling Carricante there are examples of connecting grape varieties to specific places. Even within the Etna appellation, locations can be narrowed down to individual vineyards.

Acidity in relation to vinification and aging.

The structure of white wine involves not just acidity, but also lees contact and maturation. The general description of the grape variety Kalicante does not mean all Kalicante wines will have the same texture.

Fermentation vessels and maturation methods specified in the producer's technical notes are information separate from the location of the vineyard. By knowing both the terroir and the methods, you can describe a bottle of white wine more specifically.

Benanti’s work in Milo serves as a concrete example for studying Carricante. However, the specifications of one wine from a single producer do not define the entire variety.
