02 / HISTORY

Historical and regional background

In addition to using dried grapes as in Recioto, Amarone and Ripasso methods have emerged. Even with the same regional grape varieties, choices in grape processing and fermentation create different wines. In the Prosecco hills, hillside cultivation and sparkling methods combine.

04 / A CLOSER LOOK

Varieties and Appellation Comparison

In Valpolicella, you can compare whether the grapes are dried, how much sugar remains, and the process of re-fermentation. In Prosecco, both the variety name Glera and the comparison between the wider DOC and the DOCG hillside areas are relevant. The former is a process-based comparison, the latter focuses on the area.

Let’s think about it

Why are Amarone and Recioto, which both use dried grapes, different in sweetness and dryness?
