Both Barolo and Barbaresco are made from Nebbiolo. Further north in Valtellina, it is known as Chiavennasca. By tracking the same variety, you see wine regions shift from the hills to the Alpine slopes.

The basic process without drying or refermentation.
  1. Corvina and other varieties are combined. Grape composition and winemaking method are separate pieces of information.

  2. Fermentation of sugar progresses, as does the extraction of color and tannin from the skins.

  3. The maturation method for each individual wine is to be verified according to producer specifications.

Bottle-fermented

Examples: Franciacorta, Trento
  1. Uses wine made by fermenting grapes. Variety and sparkling method are separate pieces of information.

  2. To retain the carbon dioxide created in the bottle in the wine.

  3. Contact with the lees affects aroma and mouthfeel. The duration varies depending on the appellation, wine style, and producer.

  4. The method alone does not determine the final sweetness. Check the sugar content indication separately.
