FIELD NOTE 01

Geography

Place Kent, Sussex, Hampshire, and Surrey to the south and southeast of London. While the chalk hills are significant markers, not every local vineyard sits on the same geology. County boundaries are administrative, and they don’t always match conditions created by aspect, elevation, or proximity to the sea.

FIELD NOTE 02

Grape variety and style

Learn about English sparkling wines starting from Chardonnay, Pinot Noir, and Meunier. Still wines are also a subject of comparison in Kent. By separating ripeness at harvest and the design of the base wine for secondary fermentation, it’s easier to explain why the same grapes lead to both sparkling and still wines.

FIELD NOTE 03

To Appellations & winemaking

Even producers located in the Sussex region do not necessarily label all products as Sussex PDO. Sometimes, grapes from multiple counties are blended. Separate the winery’s address from the stated origin. Following this approach is useful when reading cases like Nyetimber.
