Place major wine regions.
Southeast England’s Kent, Sussex, Hampshire, and Surrey are key. To the east is Essex, while Cornwall and Devon lie in the west, with vineyards further into Wales as well. Here, we focus on the main production areas of England and Wales, and do not treat the entire country as a single appellation of origin.

Connect coolness to the winemaking process
Cool conditions are linked to grapes that retain acidity, but how grapes ripen, as well as dealing with frost and rain, are also important. Even in regions famous for sparkling wine, still whites, reds, and rosés are produced. Don’t assume that Chardonnay and Pinot Noir always taste like Champagne; compare the vineyard and winemaking conditions to understand the differences.

Production location and source of grapes
The protected indications English and Welsh are not the same as the customary 'British Wine,' which is made domestically using imported juice or similar materials. Do not assume that a word resembling a country means 100% domestic grapes. Always read the origin of the raw materials and the certification. In your tasting notes, make separate sections for the place of production and grape origin.
