PDO: Origin of Production
According to the UK government’s 2025 guidance for still wines, PDO requires 100% of the grapes be grown in the indicated area, and conditions for grape varieties, analyses and organoleptic assessment also apply. Do not interpret 'English' or 'Welsh' merely as the winery’s location. Participation in the system is voluntary, but protection indications require meeting the criteria.

Flexibility of PGI
This guide states that PGI requires at least 85% of grapes from the indicated area and also allows hybrid varieties such as Seyval Blanc. Don’t rewrite this to allow the remaining portion to be grapes from any country. The fact that a variety cannot be used in PDO does not mean its wine is inferior. Distinguish between classification differences and actual taste evaluation.

Sparkling wines are explained separately
The numbers and varietal descriptions here refer to still wines. For details on sparkling wines or the Sussex PDO, confirm each specification separately. Terms like '85% variety,' '85% origin,' or '85% vintage' appear, but each refers to a different element. Always note what the percentage applies to, together with the relevant noun.
