FIELD NOTE 01
Eastern axis
In Kakheti, focus on the white grapes Rkatsiteli, Kakhuri Mtsvane, Kisi, and Khikhvi, as well as the red Saperavi. Saperavi is a variety with pigmented flesh, but color depth alone does not determine the length of skin contact or barrel aging. The variety is made in both dry and sweet styles, so it is important not to associate its name with a specific sweetness level.

From central toward the west
Associate Kartli with Chinuri and Goruli Mtsvane, and Imereti with Tsolikouri, Tsitska, and Krakhuna, by geography. If you shorten Kakheti and Goruli Mtsvane into a single name, the correspondence between regions and varieties becomes vague. At first, avoid abbreviations and use full names to distinguish clearly.
FIELD NOTE 03
Increase the number of comparisons between red wines.
In Racha's Khvanchkara, Alexandrouli and Mujuretuli are important. Compared to Saperavi-based reds, this shows that Georgian reds can't be explained with just one variety. For tastings, separate color, acidity, tannin, and residual sugar; the impression of ripe fruit aroma alone should not be called sweetness.
The distinction between Kafri and Gorli is unclear, making it easy to confuse grape varieties and regions.
