Reading geography

Read the Alazani and Iori river basins as axes, distinguishing valley floor, terraces, and foothills. Different banks and elevations change ripening conditions even with the same variety. Don’t use region names alone to generalize soil or harvest date; be sure to examine individual micro-zones.

Connect the varieties.

White wines of Rkatsiteli and Kakhuri Mtsvane, and red Saperavi, are learning anchors. By comparing Tsinandali and Kindzmarauli, you’ll see that even within the same Kakheti region, there are different colors and sweetness levels. By recording grape variety, designation, and fermentation method separately, memorizing place names will be linked to understanding flavors.

Go deeper through comparison.

In the region, traditional production using qvevri and methods such as separating the juice for whites coexist. Do not rank quality or depth of tradition solely based on whether qvevri is used. Instead, specifically compare which raw materials are used, how much skin contact occurs, and where fermentation takes place.
