Schuchmann Wines: White in Stainless Steel and Red in Qvevri
This is a producer in Kakheti, eastern Georgia, making wines from local varieties. Schuchmann's Rkatsiteli uses stainless steel tanks, while Vinoterra's Saperavi is made in clay qvevri, demonstrating their use of multiple winemaking methods.
By examining both the white Rkatsiteli and the red Saperavi, you can compare two different winemaking methods chosen by the same producer. This is a comparison where both the grape variety and the production method change.
Questions for this course
If it’s Georgian wine, is everything made in qvevri?
Before you start reading, briefly jot down your thoughts. You will rephrase them at the end.

Fermentation of clarified juice
Schuchmann Rkatsiteli is a white wine made from clear juice, slowly fermented in temperature-controlled stainless steel tanks. The country name 'Georgia' alone does not determine the fermentation vessel.
Saperavi in Qvevri
Vinotera Saperavi is a red wine made with 100% Saperavi, using a large clay vessel called qvevri. Maceration and fermentation with the skins and juice are done before moving to a different qvevri for further aging, as described.
6 months after racking
The six months mentioned in the Saperavi explanation refer to the maturation period after transferring the wine to another qvevri and sealing it. This is counted separately from the initial period of skin maceration. The materials also mention the use of barrels in past years, so not every vintage follows exactly the same process.
It does not come down to just a comparison of vessels.
These two wines are white Rkatsiteli and red Saperavi. Along with the vessels, the grape variety and use of skins also differ. Do not attribute flavor differences solely to the effect of Qvevri; record raw materials and processes as pairs for each wine.

What is the fermentation vessel for Rkatsiteli?
The reference page describes fermentation in temperature-controlled stainless steel tanks. Do not assume qvevri is used just based on the country name.
What period does '6 months' refer to?
There is a description of transferring to another qvevri and sealing it for 6 months of maturation after fermentation and maceration.
Why can't the influence of containers alone be compared?
With clarified juice from white varieties and maceration of black varieties, both the grape material and method differ simultaneously.
Basis and sources for the exercise
Practice exercises in comparison
Match up the raw materials, vineyard, and process from the documentation, and explain which conditions are constant in the comparison and which ones vary.
Read examples of organizing comparisons
| Conditions for Comparison | Schuchmann Rkatsiteli | Vinotera Saperavi |
|---|---|---|
| Raw material | Rkatsiteli | 100% Saperavi |
| Wine | Dry white | Dry red |
| Fermentation | Clarified juice, temperature-controlled stainless steel | Fermentation and maceration in qvevri |
| After fermentation. | No detailed description on the reference page | Transfer to another qvevri, seal, and mature for 6 months |
Sources of materials used for comparison are listed in the text and exercises.
Explain in your own words
List the grape origin, fermentation vessel, and skin contact for both wines, and explain at which step the 6-month period applies to Saperavi.
Check after writing
- Did you distinguish the two varieties?
- Did you keep fermentation and maturation separate?
- Are you limiting the cause of aroma/flavor differences solely to the vessel?
