Lakes and cliffs
Between Lake Ontario and the Niagara Escarpment, air circulation moderates seasonal temperatures. The slopes along the escarpment and the lakeshore plains differ in sunlight, elevation, and wind conditions. Don't rely only on the tourist-famed waterfalls for position; mark both lake and escarpment on your map.

Compare the subzones
Names such as Four Mile Creek and Beamsville Bench help you interpret the differences within the broad peninsula. Compare with the same varieties, such as Riesling or Chardonnay, and add information about harvest timing and barrels. These subdivisions are not simply for determining wine hierarchy.

From dry to sweet
You can learn about reds, whites, sparkling, and ice wines made from Pinot Noir, Cabernet Franc, and others. Cabernet Franc is also useful for comparing dry and sweet wines. Distinguish between grape ripeness and the later decision to wait for freezing.
