Scope of vinifera

In Ontario, focus grapes include Chardonnay, Riesling, Pinot Noir, Cabernet Franc, and Gamay. In BC, Merlot, Pinot Gris, Shiraz, and others are added. Pairing region and variety — not just the country — reveals the range for both reds and whites.

Role of interspecific hybrids

Vidal is an important variety for Icewine. In Quebec and Nova Scotia, hybrid varieties with cold hardiness such as L’Acadie Blanc are also important. Being a hybrid does not automatically mean the wine is sweet or low quality.

FIELD NOTE 03

Separate variety and production method.

The variety name Vidal and the production method/category Icewine are different things. Similarly, Chardonnay is used both for dry still wines and for traditional method sparkling wines. By adding columns for region, residual sugar, fermentation vessel, and maturation to a variety comparison table, you can compare and taste.
