FIELD NOTE 01

Deconstructing the structure of Tannat

When tasting Tannat reds, record deep color, astringency, acidity, and alcohol as separate notes. You cannot reliably assume deep color means extensive new oak. Extraction, grape ripeness, blending, and barrel choices affect texture—avoid conclusions based only on country or grape reputation.

FIELD NOTE 02

Also look at the red blend.

When comparing blends of Merlot and Cabernet Sauvignon with the use of Tannat on its own, consider how the blending changes the wine. Blending is not just about increasing or decreasing overall quality; it’s about the combination of aromas and structure. Even if only one variety is listed on the label, it is not necessarily 100%, so review the display requirements for VCP.

FIELD NOTE 03

White Albariño

Albariño is a variety that broadens comparisons between Spain and Portugal. Bouza notes its family’s links to Galicia and planting in 2001. Even with whites, the fermentation vessel and lees aging alter the texture, so you should not presume a coastal wine from the Iberian Peninsula will taste the same.
