FIELD NOTE 01

Geography

Starting from Essex, the area extends eastward to include Suffolk and Norfolk. Place these in relation to the sparkling wine regions of the Southeast on a map. WineGB describes the relatively warm conditions of the east, but ripening is not guaranteed every year. Vineyard site selection and vintage should be read together.

FIELD NOTE 02

Grape variety and style

Compare still wines of Bacchus, as well as those from Chardonnay and Pinot Noir. Because the country's signature varieties are also used for sparkling wines, you deepen your understanding by comparing harvesting, extraction, and aging. For whites, consider juice fermentation and skin contact; for reds, focus on extraction and barrel choices.

FIELD NOTE 03

To Appellations & winemaking

Do not jump to conclusions about a uniform taste based solely on the newness of a region. Select one wine based on local producer information, and compare details such as ripeness, acidity, alcohol, and vessel. Consider whether differences in taste can be explained only by climate, or if producer decisions are also involved, so that learning about regions leads to actual comparisons.
