According to the Dealu Mare specification, CMD requires a minimum of 187g/L, CT requires 220g/L for white and 213g/L for red, and CIB requires 240g/L. These are sugar content levels at harvest, not residual sugar in the bottle. When memorizing numbers, indicate the relevant appellation and wine category.

Cotnari’s product specifications state CMD 187g/L, CT 210g/L, and CIB 240g/L. Allowable varieties for CIB are also specified. Even for the same CT category, you can't combine Dealu Mare with a single number—reading the original text clarifies this.

From harvest to flavor

CT refers to late harvest, and CIB to berry concentration due to botrytis, etc., but the final wine depends on how far the fermentable sugars have been converted. With label sweetness levels and analytical numbers, practice explaining the distinction between grape ripeness and final sweetness.
