The white varieties supporting Soave
Garganega is the principal white grape for Soave in Veneto. The producers’ association highlights the vine’s tendency for large clusters, and that with yield control on hillside vineyards, ageworthy wines can also be made. The explanation covers not only the variety but also vineyard and yield management.
Criterion of 70% or above
For Soave DOC, the regulations specify at least 70% Garganega. The rest may include Trebbiano di Soave, Chardonnay, etc. “At least 70%” is not the same as “always 70%” or “always 100%.” Check the composition of individual products separately.
Sweetness due to drying.
Drying healthy bunches in the shade is a method that produces sweet Recioto di Soave. When comparing dry and sweet wines from the same grape variety, focus on post-harvest handling of the grapes. Distinguish between the intrinsic sweetness of the variety and the residual sugar in the finished wine.
