FIELD NOTE 01
Ingredients and Place
Kindzmarauli is a naturally semi-sweet red wine made from Saperavi and Saperavi Budeshuri grown in the designated zone of Kakheti. The specifications I confirmed separately define the origin of the grapes, permissible winemaking zones, and bottling area. Where it was bottled and where the grapes were grown are distinct pieces of information.
FIELD NOTE 02
Leaving residual sugar from incomplete fermentation
The specification sheet describes a style where alcoholic fermentation of the must is not completed, resulting in a finished wine with 18–45g/L residual sugar. Do not list the sugar level required at harvest and the final residual sugar in the same field. Since fermentation is stopped before all sugar becomes alcohol, there is a link between using ripe grapes and sweetness in the process.
FIELD NOTE 03
Compare to dry Saperavi.
When comparing, don't limit yourself to just 'which has stronger fruit aromas.' Even within the same grape family, differences in fermentation methods can change the sweetness and mouthfeel. Place a dry Saperavi side by side, and record acidity, tannin, and sweetness separately. Also, make sure not to apply the characteristics of Kindzmarauli to all Georgian reds.
Incorrect. The latter refers to residual sugar in the finished wine, representing sugar left after fermentation is stopped prematurely.
PAUSE & REFLECT
Check your understanding.
Are the sugar level at harvest and 18–45g/L measuring the same thing?
Read the explanation +
Incorrect. The latter refers to residual sugar in the finished wine, representing sugar left after fermentation is stopped prematurely.
