FIELD NOTE 01
Reading geography
The Istrian Peninsula and Kvarner are situated on the northern Adriatic coast. Even vineyards near the sea are influenced by inland and altitude effects, and should not be grouped with southern Dalmatia under the same warm climate. By considering relationships with Slovenia and Italy, one can start to identify shared grape varieties and wine culture.
FIELD NOTE 02
Connect the varieties.
In Istria, secure knowledge of the white Malvazija Istarska and the black Teran; in Kvarner, Žlahtina. If the name also appears in neighboring countries, confirm whether it is a grape variety or a protected wine designation. Keeping the original language notation makes it easier to cross-reference sources than using only katakana.
FIELD NOTE 03
Proceed to winemaking
Even for the same white variety, young juice fermentation, oak aging, and skin contact create different mouthfeels. Do not use depth of color alone as evidence of aging. Record separately where the grapes were grown and the winemaking method; explain which changed—acidity, aroma, tannin, or impression of oak.
Grasp the positions of rivers, seas, and hillsides/slopes, and distinguish choices in fermentation and maturation.
