FIELD NOTE 01

Reading geography

Dalmatia along the Adriatic coast is a broad region that includes the Pelješac peninsula and islands such as Hvar and Korčula. Sun exposure and winds differ between slopes facing the sea and those facing inland. Do not treat one representative spot as the boundary of an appellation—let’s refine the geography in order of peninsulas, islands, and individual slopes.

FIELD NOTE 02

Connect the varieties.

In addition to the black Plavac Mali, also note Babić and Tribidrag, as well as the white Pošip and Grk. Instead of remembering this as a region solely for reds, comparing it with the addition of a white wine broadens understanding. Dingač and Postup are clues to reading the origins in Pelješac, not as grape variety names.

FIELD NOTE 03

Proceed to winemaking

Dessert wines made with dried or overripe grapes, such as Prošek, can also serve as points of comparison in winemaking practices. However, despite similar names, they are not the same type as Italian Prosecco. In this section, focus on understanding the differences in production methods, and do not infer issues of name protection or registration status from taste descriptions.
