FIELD NOTE 01

Major regions on the southern side

Identify the locations from Plovdiv, Asenovgrad, Pazardzhik to Haskovo and Sakar. There are extensive wine regions south of the Balkan Mountains, so do not assume uniform vineyard conditions even within similarly named lowland areas. The relationship to the Rhodope Mountains and the Maritsa River also serve as guides.

FIELD NOTE 02

Red wines from Mavrud

We study Mavrud in Asenovgrad and surrounding areas. In comparison to Rubin and international reds, note fruit ripeness, acidity, tannins, and oak. Even with deeply colored reds, texture changes depending on extraction and aging choices.

FIELD NOTE 03

Deconstruct the blend

Bessa Valley wines such as Enira are examples of blending varieties. Even if the winemaking is based on the Bordeaux approach, the shares of Syrah and Petit Verdot can be high in some years. Do not assume the blend from the producer’s background; read the documentation for each year.
