FIELD NOTE 01

North and South of the Balkan Mountains

The entry to the north is between the Danube river and the Balkan Mountains. The Thracian Lowlands stretch to the south. Since the mountains also influence how cold winds arrive, do not explain ripening by latitude alone. First learn the west-east span of the mountains and the river that forms the northern border.

Learning with five regions

For learning, divide the geography into five parts: Danubian Plain, Black Sea Coast, Rose Valley (including the Sub-Balkan), Thracian Lowlands, and Struma River Valley. This framework is for understanding geography and is not the same as the number of PGIs or individual PDOs listed on labels.

Link the varieties to the locations.

Start with Gamza in the northwest, Mavrud in the south, Melnik-related varieties in the southwest, Dimiat in the east, and Misket on the hillsides. International varieties are also widely used, so compare maps of local varieties with those for Merlot and Cabernet.
