FIELD NOTE 01

Reading the North east–west

Between the southern bank of the Danube and the Balkan Mountains are regions like Vidin, Pleven, Svishtov, and Ruse. Conditions differ between areas close to the river and hill slopes near the mountains. Do not treat a large PGI as if it describes the climate of a single vineyard.

FIELD NOTE 02

Use Gamza as the starting point

In the northwest, Gamza is the entry point among indigenous varieties. Do not judge quality only by color intensity; also observe the fruit, acidity, and mouthfeel. When comparing with Bordeaux varieties like Cabernet or Merlot, check barrel usage and harvest timing, so you can distinguish varietal differences from production style.

FIELD NOTE 03

Include whites and sparkling wines as well.

You can also learn about white grapes such as Chardonnay and Sauvignon, as well as sparkling wines. Don’t restrict yourself to just whites because it’s a northern region, or to Gamza only—choose different styles and winemaking within the same region. This provides practice in verifying temperature and ripeness through the diversity of products.
