FIELD NOTE 01

Don’t oversimplify the East

Understand coastal areas like Varna, Pomorie, and Burgas, and inland regions like Shumen. Even in places influenced by the Black Sea, the conditions for grape ripening change depending on distance from the coast or hills. Do not predict acidity or aromas based solely on the word 'eastern'.

FIELD NOTE 02

Compare starting from Dimyat

To the local Dimiat, Chardonnay, Sauvignon, and Riesling are added. By considering the axes of aromatic intensity, acidity, and residual sugar, you avoid grouping all whites into a single style. Even if the aroma seems sweet, it is not necessarily a sweet wine.

FIELD NOTE 03

Also check for red labelling.

Red varieties are also cultivated in the eastern region. Geographic explanations, such as the Black Sea side, provide separate information from PGI on the bottle. Confirm the location, grape origin, and what appears on the label in order; do not judge the appellation by the winery's address alone.

Key points of this article

Aroma alone cannot determine this. Confirm residual sugar and taste separately.

PAUSE & REFLECT

Check your understanding.

If a white wine is aromatic, can you therefore decide it is sweet?
