FIELD NOTE 01

Between two mountain ranges

The Sub-Balkan is a region stretching south of the Balkan Mountains to the north of Sredna Gora. Entry points include Karlovo, Sliven, and Sungurlare. Consider separately how the mountains block wind and how vineyard elevation and aspect create differences.

FIELD NOTE 02

Cherven Misket

This is a key white variety for the region. Even if written in English as 'Red Misket,' the typical wine color is white. It's useful to develop the habit of checking both grape variety and winemaking, rather than simply associating the color in the name with the finished wine color.

FIELD NOTE 03

Separate aroma and sugar

Do not assume that the name Rose Valley means all wines are sweet or rose-scented. Even among aromatic whites, there are dry and off-dry examples, and reds are also produced. Record and compare aroma, residual sugar, acidity, and alcohol content individually.
