FIELD NOTE 01
From harvest to pressing
Technical notes for Guerila's Rebula Selection 2021 indicate hand-harvesting, sorting in the vineyard, one week of maceration, and fermentation with indigenous yeast, followed by gentle pressing. Even for white varieties, there is a skin contact process, so when comparing to fermentation using only juice, observe the extraction's influence on color and texture.
FIELD NOTE 02
Barrel and lees can overlap under certain conditions.
The documentation states that the wine is matured for one year in large old barrels, where malolactic fermentation also takes place, spending one year with its own lees. Do not sum this up as one year in barrel plus one year on lees for a total of two years. Barrel material, size, usage history, and contact with lees are aspects that describe the same period from different perspectives.
FIELD NOTE 03
Unfiltered does not necessarily mean no additives
Bottling was on January 20, 2023. The documentation also notes that it was unfiltered with a small amount of added sulfur dioxide and a residual sugar of 1.0g/L. Do not group unfiltered, natural fermentation, and organic/biodynamic certification as a single concept. This is a specific example for a 2021 vintage product; these figures do not apply to other vintages or Rebula wines.
