Using the three varieties

The technical documentation for Extra Dry NV lists Fetească Regală, Chardonnay, and Pinot Noir. The harvest is done by hand. Vineyard acreage is also listed, but these figures are not the blending ratios. Check the section headers in the documentation carefully.

From fermentation to disgorgement

After fermenting each grape variety at 12–16°C, they are blended, followed by secondary fermentation in bottle. The documentation states 12 months spent on the lees in bottle, after which the lees are removed. Distinguish between the basic process and this product’s specific timing.

FIELD NOTE 03

Read the analysis values rather than just the name

This document shows an alcohol content of 12%, residual sugar 12g/L, and acidity 7g/L. Do not interpret 'Extra Dry' in English simply as 'very dry' in everyday language, but read it as a sparkling wine indication. As an example of a non-vintage (NV) product with no vintage listed, do not definitively extend the ratios to a specific harvest year or all current products.
