FIELD NOTE 01

Morning fog in Casablanca

In Casablanca, winds from the Pacific Ocean and morning fog are important. Start with Sauvignon Blanc and Chardonnay, then progress to Pinot Noir. Chardonnay from Casas del Bosque serves as a case for analyzing the combination of sites influenced by the ocean and winemaking.

FIELD NOTE 02

San Antonio and Leyda

Leyda lies within San Antonio. The influence of the cold ocean and well-drained soils support varieties such as Sauvignon Blanc and Pinot Noir. Do not present the two names side by side as independent, equally sized regions.

FIELD NOTE 03

Compare cool-climate reds as well.

Syrah is also grown in vineyards close to the sea. Don’t assume all reds from cool sites are light; record separately fruit, spice, acidity, and tannins. Low ripeness is not the same as pronounced acidity.
