Château Pontet-Canet: Viticulture and Maturation Vessels
A château in Pauillac, Bordeaux. It practices biodynamic viticulture and uses new barrels, used barrels, and concrete vats called 'Doria' for red wine maturation.
Explain the cultivation and vessel selection at Pontet-Canet, clearly distinguishing start year, certification year, materials, and proportions.
Questions for this course
If a container is amphora-shaped, does it necessarily mean it is made of terracotta?
Before you start reading, briefly jot down your thoughts. You will rephrase them at the end.

Viticultural changes and certification
Pontet-Canet started biodynamics in some vineyards in 2004, expanded it to the entire estate in 2005, and obtained certification in 2010. The year the practice began, year of expansion, and certification year are all different.
Doria Ingredients
The dolia used from 2012 are concrete vessels shaped reminiscent of amphorae. If you identify them as pottery only by the vessel's outline, you will confuse the material. When reading about maturation, distinguish between shape, material, capacity, and period of use.
Use in combination with wood barrels.
The official explanation says about half new barrels, 10–15% used barrels, and 30–40% Doria. Introduction of Doria does not mean the complete abolition of wood barrels. Do not construct an exact proportion for a specific year from the indicative ranges.

What year was biodynamic certification obtained?
There is a lapse of time between the start of practice and certification.
What are the ingredients for Doria?
The amphora shape alone does not determine the material. When reading about containers, distinguish between shape and material. The Dolia, for instance, has an amphora-like contour but is made of concrete, and is used alongside wooden barrels. You cannot judge from the shape alone whether a vessel is terracotta or whether all maturation is in non-wood containers.
How is Doria aged after introduction?
The published materials explain the allocation to multiple vessels.
