FRANCE / THE LEARNING WORKSHOP
Read the labeling and compare with actual examples.
Once you organize the label and process, compare real wines by vintage, variety and producer.
READ THE LABEL
Place names, grape varieties, and sugar content are separate matters.
When you select a labeling term, you'll learn what it communicates.
Champagne
A protected designation of origin. The production method of bottle refermentation alone does not permit the use of this name.
Read the main text and sources →Blanc de Noirs
White wine made from black grapes. By pressing the grapes without extracting much color from the skins, a base white wine is produced.
Read the main text and sources →Brut
A category related to final sugar content. It does not refer to grape varieties, harvest year, or the aging period on lees.
Read the main text and sources →This is a fictional combination designed to study the role of labeling. It does not cover all mandatory labelling requirements for real labels.
RELATIONSHIPS
Sugar that produces bubbles, and finishing sugar.
Chronological order of the process
① Tirage & secondary fermentation
Sugar and yeast are added to produce bubbles in the bottle.
② Aging on lees & disgorgement
Collected by remuage, removed by disgorgement.
③ Dosage
Finishing after lees removal. Confirm final sweetness category.

RELATIONSHIPS
System for place of origin and classification targets.
Distinguish different roles.
AOC / AOP・IGP
Systems for origin and geographical indications.
Unique classifications specific to the region
Is it about the vineyard or chateau? Confirm what system is being classified.

CASE STUDY / Learning from real-world examples
Align producers and check the denominator for your figures.
Blend ratio and adoption rate are separate figures. Switch the item you are viewing and consider the question below the diagram.
varietal proportions in the finished product
Château Margaux 2021
- Cabernet Sauvignon87%
- Merlot8%
- Cabernet Franc3%
- Petit Verdot2%
- Subject
- Grand Vin blend
Château Margaux 2022
- Cabernet Sauvignon92%
- Merlot6%
- Cabernet Franc2%
- Petit Verdot0%
- Subject
- Grand Vin blend
Cabernet increased by 5 points. Was the vineyard replanted at the same ratio?
Check your way of thinking
This graph shows the composition of finished wines. It does not show changes in planted area. The yield for each variety and which wines were selected as Grand Vin influence the ratios.
Adoption rate from harvest
2021
- Being selected for the Grand Vin
- 36% of the harvest
- Cabernet Sauvignon
- 87% of the finished product
Year 2022
- Being selected for the Grand Vin
- 40% of the harvest
- Cabernet Sauvignon
- 92% of the finished product
If you add 36% and 87%, does it become 123%?
Check your way of thinking
Cannot be added. 36% is the adoption rate from harvest to selection as Grand Vin; 87% is the varietal composition of the finished wine. The denominators differ. The quality ranking for the vintage is not determined by adoption rate alone.

CASE STUDY / Learning from real-world examples
What should be controlled and what should be varied for comparison?
Choose a comparative approach using Clos des Mouches as an example. This is a tasting proposal, not a record of actual tasting results here.
Change white wine producers.
Drouhin's White
- Conditions to standardize
- Beaune Premier Cru / Clos des Mouches / Chardonnay / Same vintage
- Description of the plot
- The estate's own vineyards are located mid-slope, facing east to southeast.
Chanson’s white
- Conditions to standardize
- Beaune Premier Cru / Clos des Mouches / Chardonnay / Same vintage
- Description of the plot
- White wine plots are located on upper slopes and face east.
If there are four common conditions, can the comparison focus solely on winemaking methods?
Check your way of thinking
The location of the plot and method of cultivation remain. Even if the names of climats are standardized, splitting the same grape among different vinification processes does not constitute an experiment. The reference year also differs between the two companies, so check the specification for the actual year you choose.
Comparing Drouhin’s red and white
Clos des Mouches Red
- Conditions to be standardized
- Producer • Climat • Vintage
- Grapes
- Pinot Noir
- Handling of skins
- Fermentation / Extracting pigments and tannins by maceration
Clos des Mouches White
- Conditions to be standardized
- Producer • Climat • Vintage
- Grapes
- Chardonnay
- Handling of skins
- Fermentation of pressed juice.
Is the difference between red and white only skin maceration?
Check your way of thinking
Grape varieties also change. It's necessary to check the parcel planted, harvest decisions, fermentation and maturation. Using the same vineyard name as a clue, this is a comparison of how the producer designs both red and white.
Change the vintage of the same red
Drouhin: Red, a Certain Vintage
- Conditions to be standardized
- Producer / Label / Grape Variety
- What to research
- Weather, harvest date, percentage of whole clusters, extraction, maturation
Drouhin: Red, Another Vintage
- Conditions to be standardized
- Producer / Label / Grape Variety
- What to research
- The same item, and the elapsed time and storage condition after bottling.
Based on the explanation of 20–50% whole clusters, can a single percentage be determined for 2021?
Check your way of thinking
Cannot be determined. The reference page allows for variation according to the year. If the value for the target year has not been published, record it as unconfirmed; do not treat the upper limit or average as the specification for that year.

CASE STUDY / Learning from real-world examples
Read variety, vintage, and maturation time separately.
This compares the product description of Special Cuvée and documentation for La Grande Année 2014. All numbers are based on official statements confirmed as of September 2026.
Grape variety and vintage
Special Cuvée
- Pinot Noir60%
- Chardonnay25%
- Meunier15%
- Vintage year
- Multiple vintages. Includes reserve wine
La Grande Année 2014
- Pinot Noir61%
- Chardonnay39%
- Meunier0%
- Vintage year
- 2014. Blend of 19 crus
Is the taste nearly the same if the proportion of Pinot Noir is about the same?
Check your way of thinking
The rest differ in grape varieties, vineyards, vintages, fermentation, and aging. You cannot judge flavor proximity from this ratio alone.
Which stage’s duration?
Before blending
- Special Cuvée
- Some reserve wines are stored in magnums for 7–15 years.
- Information that can be discerned
- Duration spent by part of the compositional elements
After blending
- Bottle-fermented and lees-aged.
- an alternative process to complete the cuvée
- After that.
- There is also elapsed time after lees removal, shipping, and post-purchase storage
Can 7 to 15 years be called the total maturation period of the finished wine as it is?
Check your way of thinking
Cannot name. This refers only to part of the reserve aging period and is separate from the bottle aging after blending. Always specify both scope and process with durations.
Comparing dosage
Special Cuvée
- Declared dosage.
- 7〜8g/L
- Scope of the source material
- Producer product introduction
La Grande Année 2014
- Declared dosage.
- 8g/L
- Scope of the source material
- 2014 Cuvée
If the numbers are close, does that always mean the perceived sweetness is the same?
Check your way of thinking
Perception is also affected by acidity, aging, aroma, and serving temperature. Compare dosage separately and record sweetness as perceived in the glass separately.
