Palazzo della Torre 2022 is composed of 40% Corvina, 30% Corvinone, and 30% Rondinella. Corvina and Corvinone are counted separately in reference materials. Do not group similarly named varieties together as a single grape.
Two fermentation periods
70% of the grapes are fermented immediately after harvest in September, while 30% are fermented after drying in December. The two wines are blended afterwards. This is not a method where all grapes are dried, nor is it a description of maceration with grape pomace after the wine is ready.
