FIELD NOTE 01

Traditional names in Dolenjska

Zvijezdek is a traditional wine tied to Dolenjska. The important point is that both red and white varieties are used, with grapes such as Žametovka, Modra Frankinja, and Kraljevina serving as clues for learning. Distinguish between the traditional term PTP and the protected designation of Zvijezdek.

FIELD NOTE 02

Do not think about color only in terms of adding up components

Simply using both red and white is not the same as making rosé; such an understanding misses key steps. Besides the make-up of the must, the contact and fermentation with black grape skins affect colour and tannins. Even in the official amended specification, there is a distinction between destemming and maceration of black grapes and handling when red and white are pressed together.

FIELD NOTE 03

Describe the lightness specifically

Break down “lightness” into pale color, gentle astringency, acidity, and alcohol impression. Since updated blending information is released, do not apply old ratios to all current products. This chapter covers the structure of dry blends of black and white grapes; make it a habit to read figures together with their referenced editions.
