Hills of the central area

In Codru, hills and small valleys surrounded by forests shape vineyard conditions. Consider the combination of oak and linden forests, slopes, and soil differences. Do not assume all vineyards are shaded based solely on the regional name.

Start with white wine comparisons.

Fetească Albă, Sauvignon, Chardonnay, Muscat Ottonel and others are typical entry points. For still white and base wines for sparkling, required acidity and harvest time may differ. Consider not just variety but also which style is to be made.

Read about underground storage cellars

The underground spaces at Cricova and Mileștii Mici are learned about as environments for ageing and storage. Keeping temperatures stable during maturation and preserving grape acidity in the vineyard are different stages. The region also makes red wines, so don't recast descriptions of white wine as exclusive rules for whites.
