FIELD NOTE 01

Two main entry points for reds

Rara Neagră and Fetească Neagră are studied as separate varieties. When you compare the relatively light reds made from Rara with full-bodied blends, you avoid describing the whole country based on the impression of a single variety. Do not interpret the shared 'Neagră' in their names as meaning they are the same grape.

FIELD NOTE 02

Broaden the selection of white wine grape varieties.

Fetească Albă, Regală, and the aromatic Viorica are good entry points, followed by Chardonnay, Sauvignon, Aligoté, and Rkatsiteli. Viorica’s flamboyant aroma does not always mean it is sweet. Always check residual sugar and acidity separately.

FIELD NOTE 03

Reading the blend

Saperavi is also used, but it's not treated as an indigenous Moldovan variety. Learn from sources how blends are made from Cabernet, Merlot, Saperavi, and local Rara. The classification as international or local varieties, and their actual roles in flavor, are distinct.
