FIELD NOTE 01

Long production region

Baden stretches from the Tauber in the north to Lake Constance in the south. Each district has different topography and climate, so a single warm vineyard cannot represent the entire region or country.

Place the Ortenau, Breisgau, Kaiserstuhl, Tuniberg areas of central Baden, and Markgräflerland in the south, in order from north to south. After checking key locations on the map, use the main text to widen your scope.

FIELD NOTE 02

Red and white Burgunder (Burgundy varieties).

Spätburgunder, Weissburgunder, and Grauburgunder are important. Corresponding to Pinot Noir, Pinot Blanc, and Pinot Gris, these names allow for a comparison with France.

In Markgräflerland, it's important to also remember Gutedel. If we only reference the idea of a Pinot region, the unique local characteristics of this white variety are lost.

FIELD NOTE 03

Compare red wines up to extraction and barrel ageing.

When comparing Spätburgunder, in addition to regions and varieties, consider extraction and aging. If information about skin contact and barrel usage is missing, do not explain the differences by temperature alone.

When you align the documents for both wines by the same items, you can see what was standardized. Even when comparing to Burgundy, rather than searching for a fixed national flavor, understanding is easier when focusing on specific vineyards and wine labels.
