From red varieties to rosé sparkling

Miguel Torres's Estelado Rosé is a sparkling wine made from País. Even with black grapes, adjusting the amount of contact with the skins results in a pale rosé. If you consider color and bubbles as separate processes, it's easier to explain the journey from raw materials to the finished wine.

An example from published technical documents.

The 2024 technical documentation states País 100%, primary fermentation in tank for 18 days, secondary fermentation in bottle for 50 days. Aged on lees in tank for 3–5 months, and at least 6 months in bottle. The duration of fermentation and the maturation period are separate items. Do not treat these numbers as standards for all of Chile.

View the value of old vines from a different perspective.

País can be reconsidered not only as a full-bodied red, but also from the perspectives of acidity, fruitiness, color, and the texture of the bubbles. When compared with VIGNO’s Carignan, we see that efforts to preserve old vineyards are not limited to a single grape or production method.
