FIELD NOTE 01

Clare Riesling

Clare is a hilly area north of Adelaide. Riesling is representative, with names such as Watervale and Polish Hill River. Consider the warmth of the day, plus the effect of elevation and cooling from afternoon through night. For reds, Shiraz and Cabernet are also important.

FIELD NOTE 02

The cool vineyards of Hills

Adelaide Hills has significant elevation differences, and its conditions vary with altitude and slope orientation. In addition to Sauvignon Blanc, Chardonnay, Pinot Noir, and Shiraz, it also cultivates varieties like Grüner Veltliner.

FIELD NOTE 03

Standardize conditions for comparison

With Clare Riesling and Hills Sauvignon, both region and variety change at the same time. If you want to focus on the differences between regions, include wines of the same variety. If you want to focus on varietal differences, confirm the residual sugar and use of barrels. This enables a comparison that does not attribute all aromatic differences solely to place of origin.
