White indigenous varieties grown on plateaus
Verdejo is the representative white grape of Rueda. The Regulatory Council presents its adaptation to stony soils, altitude, and significant temperature differences between day and night. Aromas reminiscent of herbs or fruit and acidity provide clues, but the name Rueda alone does not determine the ripeness of each individual wine.
Add lees contact time.
After fermentation, yeast and other solids settle out as lees. The official explanation from Rueda describes contact with these lees, and batonnage—stirring the lees—as processes that affect mouthfeel. Leaving the lees and stirring them are separate choices.
Check containers in a separate section
Lees accumulate in both tanks and barrels. Therefore, even if it says 'lees and aging,' the vessel is not necessarily wood. When comparing two Verdejos, separately record the fermentation/maturation vessels, time on lees, and whether batonnage was performed.
