Savatiano is a widely used white variety in Attica and Central Greece. It is used for dry whites both as a varietal and in blends, and is described as having aromas reminiscent of yellow stone fruits and freshly cut grass, with a rounded palate. Do not describe the variety solely as raw material for Retsina.
