Even in the same year, the grape variety and vineyard may change.

Heiligenstein 2023 is Riesling, and Lamm 2023 is Grüner Veltliner. The source for the former describes mainly sandstone soils, while for the latter it focuses on clay. Even if they share the same producer, vintage, and region (Kamptal), you cannot attribute aromatic differences to just grape variety alone.

Riesling fermented in stainless steel

The Heiligenstein juice ferments at 15–20°C in stainless steel, and then matures on fine lees until bottling. The 2023 documentation states the wine is bottled in July 2024. Beyond the grape variety, noting the vessel and contact with lees makes the winemaker’s choices more concrete.

From small to large barrels in Lamm

Lamm is fermented in 300L Austrian oak barrels that are 2–3 years old, along with a portion in new acacia barrels. After fermentation, the wine is transferred—with 5–10% of the lees—to 2,500L oak or acacia barrels. Simply summarizing this as 'wooden barrels' would lose distinctions in material, size, barrel age, and timing of transfer.

Reading bottling dates in vintage records

The bottling for the Lamm 2023 is recorded as February 11, 2025. Although this is later than that of the Heiligenstein from the same year, the two wines differ in both grape varieties and vessels. Rather than attributing all differences in flavor to the length of time alone, compare what else changed alongside it for each wine.

When is a 300L barrel used in Lamm?
The materials state that fermentation occurs in 300L oak and, in part, new acacia barrels, then contents are transferred to a 2,500L wooden barrel. By matching the two vessel sizes to the process steps, you can explain the sequence.

Why can you not attribute the flavor differences between the two wines solely to the grape varieties?
The producer and the year 2023 are the same condition, but the vineyards, soils, and fermentation/maturation vessels are also different. Even in the same vintage, it is not a comparison limited to just the grape variety.

What is the bottling date in the annual data for Ram 2023?
In the bottling section of the 2023 documentation, the date is listed as February 11, 2025. The harvest year, fermentation, maturation, and bottling all occur at different times; you cannot determine the release date based on the year alone.
