Whites rooted in valleys and hillsides

Nosiola is a white variety from Trentino, cultivated on the hills along the Adige valley and in Valle dei Laghi. Standard whites are highlighted as having a delicate impression reminiscent of hazelnuts. The connection between the name and the aroma should not be misinterpreted as the addition of nuts to the ingredients.

Trentino’s Vino Santo uses Nosiola. Selected bunches are spread on racks called arèle and air-dried for an extended period before pressing. Due to dehydration and consequent concentration of sugars and other components, the difference from standard white wine cannot be explained by grape variety alone.

When comparing standard dry whites and sweet wines from dried grapes, record separately the harvest and press dates. The drying period is a different process from bottle maturation. What is common to both wines?
Standard white and Trentino Vino Santo are both linked by using Nosiola as raw material. However, drying, fermentation, and aging after harvest are different. After noting the variety in common, compare the differences in each process.

What is the process carried out in an arele?
Arele are racks used for air-drying grapes. The harvested fruit loses water and the material becomes concentrated. Because the timing and object of this process differ from bottle aging of finished wine, when reading about the duration in sources, make sure to check what is being placed where.

What dates besides harvest date should be checked for comparison?
For wines made from dried grapes, there is a period between harvest and pressing. How the fruit is handled during this interval differs significantly from standard white production.
