FIELD NOTE 01
One grape variety, different zones
Chablis white is made from Chardonnay. Match the designations Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru with their respective areas and production conditions.
Do not assume quality simply increases as the name gets longer; check on a map to see which region the wine comes from.
FIELD NOTE 02
Read about geology and slopes separately.
The history of geological layers provides clues to the land in Chablis. Added to that are the slopes’ orientation and elevation, as well as vintage-specific weather and viticultural decisions.
Do not directly explain that wine takes on the same flavor as the geology just because the soils contain fossils. To connect geological information and aromas/flavors perceived in the glass, multiple conditions must be investigated.
FIELD NOTE 03
Check containers in producer's materials
The designation 'Chablis' does not specify whether barrels were used. Review individual wine sources for details on vinification and aging vessels and periods.
When comparing different vineyard sites, use the same vintage and the same producer. When comparing producers, use the same appellation and the same vintage. This makes it easier to organize what is changing.
Chablis refers to the place and appellation, Chardonnay to the grape variety. Link the label’s place name to the variety, then read the particularities of the area and the producer’s approach.
