Read geography, grape resources, and production processes separately.
Vineyard
Malbec from Paraje Altamira.
Fermentation / Extraction
Native yeasts, some whole bunches, 20-day maceration.
Aging
Both MLF and aging are conducted in concrete.

FIELD NOTE 01
The raw material is Paraje Altamira.
The materials for Concreto 2019 indicate 100% Malbec from Finca Piedra Infinita in the Uco Valley, at an altitude of 1,100 meters. The vineyard has very stony soils with limestone deposits. This is not representative of the whole country but should be read as a case study of a specific vineyard and vintage.
FIELD NOTE 02
Follow the process step by step
Fermentation is done in concrete vessels not coated with epoxy resin, using indigenous yeast. Some ferment with whole clusters and maceration lasts 20 days. Malolactic fermentation and maturation are also described as occurring in concrete.
FIELD NOTE 03
What you can tell from the vessel
This document shows that red wine aging is not always in oak barrels. However, concrete use alone does not mean zero oxygen contact or zero intervention. Note extraction, whole cluster, and aging as separate items in your notes.
Incorrect. The materials involved include skins, seeds, and some stems, and the documentation specifies concrete as the aging vessel.
PAUSE & REFLECT
Check your understanding.
Can the tannins in this wine be explained as coming entirely from the barrel?
