Xarel·lo is a white grape variety associated with Penedès in Catalonia. Cava's official materials explain that it forms the traditional blend with Macabeo and Parellada. These three names are grape varieties, not appellations or processes.
The structure within the blend
DO Cava introduces Xarel·lo as giving the wine body and structure. However, increasing its proportion does not straightforwardly improve quality. The blending balance changes depending on the ripeness of the base wine, blending partners, and intended style.
