Jura’s Savagnin and maturation

Savagnin is a white grape of Jura, slow to ripen, and is used for Vin Jaune. Vin Jaune is a dry white wine. The yeast film that forms on the wine’s surface during extended aging results in distinctive aromas reminiscent of walnuts and spices. Do not confuse deep color or matured aromas with high residual sugar.

White wines made with fortification.

The work of topping up wine to replenish what has evaporated from the barrel is called ouillage in French. Keeping the wine level high to minimize air exposure is one way to express Savagnin. Domaine de la Pinte’s “Savagnin Ouillé 36 mois 2020” is aged for 3 years in large and 228L barrels. There are examples of white wines made with topping up and extended aging.

In Valais, this means Heida or Païen.

In Switzerland's Valais, Savagnin white wines are known as Heida or Païen. Even when you find the same variety, the winemaking methods, such as for Jura’s Vin Jaune, are not necessarily identical. Use alternate names as clues to connect origins, then compare producers’ fortification and aging methods.

What is the relationship between fermentation and aging vessels?
In the materials, alcoholic fermentation and aging are listed separately. Fermentation is in temperature-controlled tanks; aging is 3 years in large barrels and 228L barrels. Do not summarize simply as ‘a wine that uses barrels’; note which steps use barrels for a detailed account of the winemaking.

What can you infer about the winemaking from the ouillé notation?
Ouié refers to the practice of topping up. It does not mean chaptalization or prolonged skin contact. Since this product’s label also notes three years of ageing, do not assume that topping up is limited to quick-ageing whites: read both the process and the duration.

Can the wine in this document be called Vin Jaune based only on the grape variety?
Vin Jaune uses Savagnin, but this document describes a different method involving fortification and aging. Since the same variety yields multiple styles, do not equate variety name with wine type; explain according to product name and process.
