Pedro Ximénez is a white variety used in Andalusia. The sweet sherry known by the same name is dark in color, but this is different from a red made from black grapes. This provides an example of how to distinguish between the skin color of the raw grape and the color of the finished wine.
Concentrating fruit by sun-drying
For PX sweet Sherry, ripe grapes are sun-dried to reduce water content, concentrating the sugars in the pressed juice. Fermentation is then stopped by adding alcohol. Concentration through drying and arresting fermentation have different timings and functions.
Changes brought about by oxidative aging
The regulatory council describes PX maturation as oxidative. This is not the same process as maturation under flor. The method handled here is for making sweet Sherry and should not be applied directly to all wines from other regions with the same grape name.
