White grape varieties of La Mancha

Airén is a white grape variety listed in the official varieties of La Mancha. Alto Vela releases a white wine from La Mancha DOP using this variety. By checking the raw materials in the local variety list and reading winemaking from a single product document, you can distinguish between the region as a whole and producer choices.

Night harvesting is used to control temperature.

The Altuvera product description says that harvesting is done at night by machine, and the grapes are brought into the winery at 8–10 °C. Then, after 8 hours of skin contact at 10 °C, they are pressed. Just because it is a hot region does not mean the grapes ferment at high temperatures.

Separating skin contact from fermentation.

Fermentation of the same product takes place in stainless steel tanks at 16°C for 18 to 20 days. The 8-hour skin contact before pressing and the fermentation after pressing are separate stages.
