In Elgin, altitude and ocean breezes aid in gentle ripening. Starting with Chardonnay, Pinot Noir, and Sauvignon, consider not only daytime temperature but also nighttime cooling. Do not assume it cools in the same manner as low-lying coastal regions.

Sub-regions of Walker Bay
Near Hermanus, in Hemel-en-Aarde, there are separate Wards named Valley, Upper Valley, and Ridge. It is important not to treat the broad Walker Bay as synonymous with these. When comparing Pinot Noir and Chardonnay, make notes of the detailed place names on the label.

To Cape Agulhas
The area around Elim in Cape Agulhas is also a region strongly influenced by sea winds. As you traverse the southern coast with Sauvignon and Semillon, you’ll see cool-climate regions as more than just areas for Pinot. Wind brings both cooling effects and viticultural challenges.
